Colombia Manantiales del Frontino

Our first full production roast was done 2 Dec & we’re finally done cupping, packing & sending them out. Thank you for your support & hope you’ll enjoy this Oxygenated Natural from the Manantiales farm in Colombia!

This colombian was the first batch of green coffee we purchased - at a minimum purchase batch of 12kg. We bought this at a premium as it is in the exotic range of the Manantiales farm, and launching it as our first because it's special to us - our first! It was a very very small batch purchase so we hope you enjoy it because it's really not here to stay for much longer.

We really liked it because on cupping it was very fruity and complex. Upon roasting and doing more cupping, we felt that it was more suited for an espresso roast. Roast it darker and it would taste too roasty with all the flavours mellowed, roast it lighter and it would be nice at first but then slightly underdeveloped as it cools. It had a medium body when we roasted it the way we did, hence we decided it would go best as an espresso. When extracted as an espresso, the flavours shows up very pleasantly and well-balanced.

We met Dayat, their Regional Director in Asia at their office in Singapore, and got to know that Andres Londono is the third generation of coffee producers at the Manantiales estate, and the farm is currently partially owned by a Singaporean. Hoping to build direct farm to roaster relationships, they have offices in Dubai, Korea and Singapore. They were very kind to host us at their place with a cupping & sharing session, thankful for their showcase & commitment towards better quality of coffee and livelihoods for the farmers.

More about the Beans:

Manantiales Del Frontino

The coffee cherries were being fermented in an aerobic environment for 90 hours before being transferred to a controlled drying house. This method allows for the reduction of chlorogenic acid development and accomplishes lower bitterness.

Some reviews we have gotten so far on the flavour notes:

Cupping done by one of our pioneers, T: “(The) Manantiales has juicy and vibrant acidity, which is my cup of tea (coffee).”, “Stone fruit upfront and tropical fruit acidity at the end (hot), peach and tropical fruit acidity and sweetness, and some caramel finish (warm)”. On Espresso: "Cherry Liqueur notes"

Thoughts by one of our customers, K, on the Manantiales (Colombia) beans brewed on Espresso: “Beans are lighter than the typical espresso bean you’d find in a singaporean roastery, reminds me of Aussie beans.”, “Drunk black is where it shines. It’s got that fruity funk you would look for in a natural. Bright acidity that doesn’t go into the citrus side of things, maybe apple/nectarine.”

Tried on a v60 brew by one of our customers, G, on the Manantiales (Colombia) beans that was recommended for Espresso: “While the flavour profile was very good - I also got classic milk choco and stonefruit - for a filter brew you don’t get the depth of flavour; felt it was a bit shallow in sweetness and thin on mouthfeel compared to a Nylon filter brew”

We sure hope you enjoyed brewing and thinking about the actual flavours you're tasting in you cup! Finally, here's our take on the beans and brew.

Our flavour notes

On cupping: Medium bodied, Floral, Black tea, Plum, Blackcurrent - very pleasant and complex.

On the Espresso: Stone fruits, cherry, chocolate with some nuttiness, honey caramel sweetness on finish.

We brewed the espresso at the usual target of 1:2 at 18g in, 36g out, with a shot timing of 24-26s. With a few tweaks depending on when you brew the cup, the flavour notes pops!
