    About the Roast

    Timor-Leste has had a long and tumultuous history that has seen colonization, several occupations, independence and a long and difficult path to peace. Coffee has played a role in Timor-Leste’s economy since the beginning of the country’s modern history.

    By way of fun-fact, coffee is the Timor Leste's second most valuable export and is exceeded only by oil. A full third of the country’s population depends on coffee as their primary source of income. Most of the coffee harvest is Arabica. A small amount of Robusta is grown at lower altitudes, but generally, Timor-Leste’s mountainous terrain lends itself well to high altitude Arabica cultivation. 

    Letefoho has the highest altitudes in Ermera and coffee farms lie between 1,300 and 1,900 meters above sea level.

    This combination of high altitude, rich soil and superb climate, when paired with a focus on increasing farmer know-how and improving infrastructure, has—and will continue to—produce incredible coffees.

    We're excited to let you try these beans from Timor Leste, a coffee-producing yet rare coffee origin to find in Singapore since it is very difficult to bring these beans from Timor Leste all the way here.

    About the Process

    Depending on the crop that is collected from the smallholder farmers in region of Railaco, the Bobby Lay and the team at Timor Global evaluates each lot and decides on whether the lot is fit for the natural process. Strict standards are set to ensure that each batch of natural processed coffees that come out of the Railaco Processing Station is as consistent as possible.

    Coffees are prepared by immersing them in water, then removing the floating cherries.  Thereafter, they are dried on raised beds to ensure consistent airflow through each cherry, controlling the rate of organic fermentation as best possible, bringing out the best flavours that we experience in the coffees. Once the moisture level reaches a desired level, then the coffees are hulled and prepared for export.


    Typica
    The typica variety is an arabica varietal in itself. It is found is many coffee producing countries because of its long history. Originating from the birthplace of arabica, Ethiopia, it is a tall variety characterized by very low production, susceptibility to the major diseases, and good cup quality. Today, Typica is not as commonly grown due to its susceptibility to pests and diseases. It has been and is still being widely produced in Blue Mountain, Jamaica. 

    Tim tim ( Hibrido de Timor)
    The only one of its kind on record, the spontaneous mating of a Robusta and an Arabica plant bore Timor Hybrid on the East Asian island of Timor. Since its appearance in the 1940s, it has become the parent plant for many modern man-made hybrids, like the Catimor (cross between a Caturra and Timor Hybrid), Sarchimor and more.

    The Tim Tim displays the robustness of Robusta with some of the mellowing flavor characteristics of Arabica coffee. The plant's thick, sturdy trunk and droopy branches allow for nutrients to disperse efficiently, encouraging high cherry yields (which farmers naturally appreciate).
