    About the Roast

    Roast will be sent out within a week of roasting. First roast is the 27th of July 2025, first showcased on 17th July in the SIGEP cupping in collaboration with the Singapore Coffee Association.

    Intentionally kept more secret than usual, this farm based in Yunnan, Dehong declined for us to know the exact chinese character name of it, and we were only left with "Zhu Lou" in "Dehong". They had named this "Rose Nebula", as the farmers had in mind a flavor profile developed through a carefully crafted anaerobic enzymatic washed fermentation process. 

    We found that for these beans, that it is optimal for espresso, but feel free to try it out on filter! *Be the first few to get these with a limited edition flavour card that we printed for SIGEP during our showcase!

    The farmers start by selecting only fully ripe, sugar-rich red cherries. The red cherries are then placed in a sealed, low-temperature environment to ferment slowly. During this stage, they introduce natural enzymes to support the flavor development. 

    These enzymes play a vital role. Inside every coffee cherry, there are aromatic precursors — natural compounds that don’t carry much aroma on their own but can transform into floral and fruity notes under the right conditions. Enzymes act like keys, gently breaking down the pectin layer surrounding the seed, allowing these hidden compounds to be released. 

    In the right anaerobic environment, these precursors develop into clear and expressive flavors, such as the soft scent of rose, the sweetness of lychee, and the bright, candy-like notes of citrus and sparkling grape wine. The sealed, oxygen-free fermentation also helps preserve the purity and clarity of flavor, resulting in a cup that is sweet, elegant, and long-lasting on the palate.


    About the Farmer
    Zhulou Manor is nestled in the highlands of Dehong, Yunnan, spanning approximately 300 acres. The estate cultivates high-quality coffee varieties including Geisha, Typica, Sarchimor, and Batian.

    Grown at elevations above 1,600 meters, the coffee trees thrive in organic, selenium-rich soil. The farm follows eco-friendly, sustainable agricultural practices, using avocado and macadamia trees for natural shade to help maintain ecological balance.

    In between the coffee plots, crops such as sweet potato leaves and radishes are interplanted (not harvested and allowed to decompose naturally) to naturally enrich the soil and support long-term fertility. 

    Catimor
    The arabica in Yunnan is mainly of the Catimor variety – a hybrid of C. Arabica and C. Canephora that makes it more disease resistant and helped it establish itself in a new environment. With so much work going into breeding better and better Catimor strains, they now have brighter and fruitier acidity with woody and nutty notes.
